Miss Orem Royalty Lunch

I invited my royalty over for another lunch together. We are having such a great year.
The menu included baked salmon, cilantro lime rice, spinach salad, steamed asparagus with an herb sauce, fresh country white bread and yummy cherry berries in a cloud.

It was the first time I was able to use the crown dishes that I received as an early birthday gift.

I plan on using these a lot!

For the salad I made my favorite spinach recipe with sugared slivered almonds, crispy bacon and tart granny smith apples with a sweet red onion vinegrette. Absolutely delicious. It is the very best spinach salad!

I made a Café Rio style cilantro lime rice.

And for dessert, cherry berries in a cloud.

There is nothing more enjoyable than fine food shared with good friends.

F.E.A.S.T. at Orem High School

I was invited to speak at the Orem High School Seminary F.E.A.S.T. last Friday (friends eating at Seminary together). F.E.A.S.T. is a lunch time devotional held once a month.
Bring your lunch, eat with friends and feel motivated and uplifted by the message.

I spoke about overcoming fears and setting and accomplishing goals.

I shared my favorite quote by Marianne Williamson about overcoming fears. It says, "Our deepest fear is not that we are inadequate. Our deepest fear is that we are powerful beyond measure. It is our light not our darkness that frightens us. We ask ourselves 'who am I to be brilliant, gorgeous, talented and fabulous?' Actually, who are you not to be? You are a child of God. Your playing small doesn't serve the world. There's nothing enlightened about shrinking so that other people won't feel insecure around you. We were born to make manifest the glory of God that is within us. It's not just in some of us; it’s in everyone. And as we let our own light shine, we unconsciously give other people permission to do the same. As we are liberated from our own fear, our presence automatically liberates others. "

I shared some of my fears and insecurities that I have overcome.

Castle Park Events Center in Lindon

I think all little girls dream of being a princess.
This past week, right here in Lindon,Utah, Castle Park Events Center had it's Ribbon Cutting and Open House events. This amazing site sits on 5 acres and has endless possibilities for uses.
The main building can accomodate TWO wedding receptions at the same time - both about 3200 square feet - newly rennovated.

There is a CASTLE on property perfect for dances and parties.

That is if you can get by the guards manning the drawbridge.

Also on property is a two-story playhouse.

The upstairs comes equipped with seven little beds.

It is so quaint - I almost forgot it's 2012.

Castle Park has two playgrounds as well as an amphitheather.


First thing I needed was a dress fitting to transform from Miss Orem into Cinderella. As a young girl my favorite princess was always Snow White because of the way she could talk to the animals, but let's face it, Prince Charming is cute!

Thursday was the Ribbon Cutting. Amy and Eric Barzeele are the owners of Castle Park Events Center and they have been working tirelessly these past eight months rennovating and sprucing up this delightful property.

Lindon Mayor, Jim Dain, was in attendance as well as many members of the Utah Valley Chamber of Commerce Pace Setters. They are the welcoming arm of the Chamber.

Here I am with my new little friend, Mariah.



The hall was festive and ready for a celebration.

Brown Brothers catered the food for the Ribbon Cutting on Thursday as well as for the Open House on Friday.

Chicken parmesan is one of my favorites!

After lunch I had the opportunity to play a bit of piano for the guests.

Friday night the center was transformed once again for the Open House.





The Open House was well attended and I made a lot of new friends.

Mr. Orem 2012

Last night Orem High School held their "Mr. Orem" competition. I was asked to be one of the four judges. Standing next to me is a former Mr. Orem - Dustin Christensen. He was also judging.

There were EIGHT fantastic candidates who were selected on by the OHS student body to participate.

Another former Mr. Orem, Eric Sackett, was the evening's emcee. He did an outstanding job! I highly recommend him if anyone is looking for an emcee. He is funny, quick witted, knows how to work a crowd and is also a very talented pianist and vocalist.

The Mr. Orem hopefuls had creative talents ranging from lip-synching to video presentations to a magic demonstration.

The group dance showed off the contestants confidence and high energy personalities.

Then there is the suspenseful moment before the winner is crowned.

And the winner is . . . . Mitch Fowler. Congratulations to Mr. Orem 2012.

Thanks for asking me Orem High. Being a judge is a fun experience and a lot less nerve wracking than being a contestant!
